It begins with an early harvest and a strict selection of the very same grapes used in our flagship wine, chosen specifically to allow the fruit’s natural expression to shine. We worked with innovative yeasts that required less sugar while enhancing key flavor components during fermentation. Finally, we removed the alcohol as delicately as possible and then reintroduced the natural elements of the wine (excluding alcohol) to preserve its structure, balance, and integrity (something not seen in the industry today).
